From Pasture to Cellar: The Precision Art of Cheese Maturation
At the foot of the Alps, Käserei Wildberg has been carrying on the tradition of artisanal cheesemaking for generations. However, as consumers’ expectations for cheese quality grow increasingly demanding, the conventional cellar’s temperature and humidity control can no longer fully meet the needs of premium cheese maturation. How can producers preserve traditional flavors while achieving digital monitoring? JFE’s intelligent sensor technology provides the perfect answer.

For Käserei Wildberg, JFE designed a cheese cellar solution that integrates a multi-dimensional sensor network:
- High-Precision Temperature and Humidity Sensor:Continuously monitors the optimal 5–12 °C temperature range and 85–95 % relative humidity inside the cellar to prevent surface cracking or abnormal mold growth on cheese.
- CO₂ Concentration Sensor:Intelligently adjusts gas circulation via the ventilation system to simulate the microclimate of a traditional cheese cave.
- Light Intensity Sensor:Automatically controls LED cold light sources to prevent light-induced oxidation of cheese fats.
"Our Gruyère cheese requires a 180-day maturation cycle, and even a 1 °C variation can alter its final flavor. JFE’s system ensures that every wheel of cheese is kept in its ideal microenvironment.”

Modular Intelligent Control System
All sensors are connected to local controllers with redundant design for data collection and device interaction:
✅ Multi-Zone Independent Control:Customized parameters for different cheese types, such as blue cheese and washed-rind cheese
✅ Adaptive Control Algorithm:Automatically optimizes temperature and humidity curves based on historical data, reducing manual intervention
✅ Visualization Management Platform: Real-time cellar status monitoring via a 7-inch touchscreen, supporting multilingual interfaces

Sustainability Upgrade
Each year, the system enables Käserei Wildberg to achieve:
Each year, the system enables Käserei Wildberg to achieve:
- 15% reduction in energy consumption (through intelligent ventilation strategies)
- 20% reduction in cheese loss (by precisely controlling mold growth)
- 30% reduction in manual inspection costs (with digital records replacing paper logs)
With JFE’s technical support, Käserei Wildberg has not only modernized its traditional craftsmanship but also shortened the cheese maturation cycle by 10 days, while maintaining a 98% product qualification rate. This family business, founded in 1887, is now writing a new legend through digital innovation.
